The world of coffee is evolving… become a specialty coffee professional.

The Australian Specialty Coffee College (ASCC) currently delivers it’s ‘Coffee Pro Workshop’ at various community colleges located throughout Sydney.

This workshop offers a great introduction to specialty coffee studies for participants, in an intensive 4 hour session. This is not your average barista course.

The session is fasted paced and hands-on, covering important practical and theoretical aspects particular to specialty coffee, such as cultivation and processing techniques, professional cupping (tasting) and alternative brew methods and espresso extraction and milk texturing.

Agenda

Over the course of the morning participants will:

  • Gain a valuable insight into the history of coffee, coffee cultivation, coffee processing methods and various other factors affecting final cup quality
  • Be guided through sensory evaluations and flavour identification within various coffees, by professionally cupping of specialty grade coffees, and following Cup of Excellence protocols
  • Examine current industry trends, investigating popular, alternative brewing methods such as Hario V60, Syphon, French Press and Aeropress
  • Take a close look at correct espresso coffee extraction and milk texturing techniques, as well as having fun with coffee art
  • Discuss future technological developments within the coffee industry, as well as ethical initiatives and projects relating to coffee producing countries

 

Learning Outcomes

By the end of the morning the student will be able to:

  • Identify parts of the coffee plant/cherry
  • Differentiate between commercial coffee varieties
  • Describe different coffee processing methods
  • Comprehend principles of coffee tasting/science
  • Navigate a professional cupping form
  • Identify various flavours found in coffee
  • Identify various coffee processing methods based on cupping
  • Use a commercial espresso machine
  • Correctly extract quality espresso
  • Correctly texture milk
  • Prepare quality espresso and espresso-based drinks
  • Design various coffee art patterns
  • Identify alternative brew equipment
  • Correctly brew specialty coffee using alternative brew equipment
  • Build recipes for alternative brewing

 

 

Important information

Participants should have full breakfast at least one hour prior to course. Please note, no perfume or overpowering deodorant/scents should be worn to workshop. This workshop is limited to nine participants.
